Swordfish Souvlakis

200 gr of cubed swordfish steak
10 cherry tomatoes
1 zucchini cut into half-slices
200 ml extra virgin olive oil
30 gr of oregano
30 gr of fennel seeds
30 gr olive chopped
1 pepper
Salt and pepper to taste


  1. Soak the wooden sticks for the skewers in water for 10 minutes.
  2. Sauté the fennel seeds in the frying pan without any grease to extract the aromas. .
  3. Marinate swordfish with fennel seeds, olives and oregano, cover with olive oil and marinate for at least 1 hour.
  4. Sear the skewers alternating swordfish with tomatoes, zucchini and pepper - season with salt and pepper and broil 5 minutes by turning frequently to avoid burning the wood too quickly.
  5. Decorate with chives or fresh parsley. Serve with your favorite accompaniment.


​You can replace tomatoes and zucchini with your favorite vegetables.

Cut swordfish and vegetables the same size for easier and simpler cooking.

You can marinate skewers in your favorite marinade for 12 or 24 hours.

You can cook the skewers in the oven at 180 C between 5 and 8 minutes.
