Catalan Paella

3 cleaned squid in slices
18 medium shrimps
6 scallops 10-20
1 lb. of monkfish
6 clams littleneck
1 lb. Moussels
1/2 strong chorizo
2 red peppers
1 yellow onion
4 garlic cloves
2 tbsp tomato paste
Salt, pepper, thyme, saffron
1/2 cup white wine
600gr of paella rice
1 liter of fish stock
1/2 cup olive oil
2 lemons


  1. Have your fish prepared by your fishmonger.
  2. Cut the peppers into thin strips, chop the onion and chop the garlic.
  3. In your paella plate heat your oil and add onion and pepper.
  4. Give a light coloration. Then add the squid, monkfish, clams and chorizo and garlic, sauté.
  5. Add tomato paste, rice, salt, pepper, thyme and saffron.
  6. Stir and deglaze with the white wine.
  7. Incorporate the fish stock and reduce the thermostat. Leave simmer 15 min. Always stirring and add the scallops, shrimp and mussels.


You may need to add fish stock. It is important to always stir the paella and add the liquid as you go.
