Ingredients

1 T4 octopus (about 1.7 Kg)
1 onion
1 green leek
2 carrots
2 celery branches
3 cloves of garlic
20 gr herbs from Provence
50 gr coarse salt
100 ml red wine vinegar
1 L. cold water

Marinade:
15 cl of olive oil
The juice of 3 lemons
​Your favorite aromatic herbs

Preparation

  1. Put all the ingredients in the pot and bring to a boil.
  2. Reduce to low heat on the first bubbles, cook 1 to 2 hours checking the tenderness of the octopus with the fingers.
  3. Peel the octopus hot - remove the purple skin that comes off easily.
  4. Marinate all night in the oil.
  5. Drain and grill for 3 minutes per side.
