Snow Crab Spring Rolls

Ingredients

2 pink soy leaves
1 section fresh 3L snow crab cooked
20 matane shrimp
10 carrot sticks
10 cucumber sticks
40 g coriander
30g of rice vermicelli
1 sauce "the good" (sold at La Mer)
Salt and pepper to taste

Preparation

  1. Soak the vermicelli in warm water for 5 minutes
  2. Remove the crab meat from the shell
  3. Cut the carrot and cucumber into thin sticks  and wash coriander
  4. Boil the vermicelli for 2 min and cool
  5. Spread the soy leaves and place in the middle coriander, crab, shrimps, carrots and cucumber - fold the sides and roll
  6. Pour the sauce "le bon" into a ramekin and enjoy.

Tips

Soy leaves can be replaced with rice cakes that need to be soaked before using them
Coriander can also be replaced by mint for a fresher aroma
Add mango or papaya for a more exotic taste
