Sesame tuna tataki, mirin and honey

INGREDIENTS

300gr yellowin tuna darne
1/4 cup salted soy sauce
1 cu. with mirin soup (Japanese sweet wine)
1 cu. with honey soup
2 cu. with sesame oil soup
1 cu. with rice vinegar soup
1/2 cup sesame seeds
1 cu. with wasabi paste soup
1 cu. sunflower oil soup

 

PREPARATION

  1.  In a small bowl, combine soy sauce, mirin, honey and sesame oil. Divide into two equal parts. Mix together the rice vinegar and set aside as a side sauce.
  2.  Spread the sesame seeds on a plate. Water the tuna with the remaining part of the soy-based mixture and press the fillets into the sesame to cover.
  3.  Heat the sunflower oil in a cast iron pan until very hot. Place the fillets in the pan and grab them 30 seconds on each side.
  4.  Serve and accompany the reserved sauce and wasabi paste.

To get a pink juicy flesh, it is recommended not to cook your tuna too much.
