Oyster Shucking Service
Our new oyster shucking service is available with your order for a case of 100, 50, or 12 oysters. To order, choose your oysters and add the service to your cart. We will open your oysters at the time of your order for in-store pickup or home delivery (Montreal area only). Covered with the shell and served on ice with lemon and mignonette, the oysters can be kept for up to 6 hours after opening. Before consuming, remove the shell and detach the lower muscle.

The Price of Oysters
The price of oysters can vary depending on the quality and provenance. There are "standard" and "choice" oysters on the market. "Standard" oysters are oysters that do not have a nice shape. The "choice" oysters are precisely chosen by the oyster farmer to ensure a beautiful shell, which is solid and easy to open. Choice oysters typically sell for more than $1/oyster in quantities of 100 or more oysters.
The price of the whole oyster case is advantageous because there is no handling of the product. When we sell oysters in smaller sizes (by the dozen, per unit) the price per oyster is higher because each oyster is carefully checked before being packed for your order.
