Reserve your portion of sushi quality tuna. This tuna is generally lean with a beautiful red color and a rather firm texture. We will cut a nice portion of 250 gr in freshly arrived tuna, either in steak or Saku (Japanese style block cut). The tuna species is bigeye or yellowfin depending on the day's arrival.
