La Mer has worked closely with the same expert fisherman for over 20 years to rigorously select these wild specimens. Each unit, ranging from 40g to 100g, promises iodized and sweet flavors, certified by OceanWise and Fourchette Bleue for responsible and sustainable consumption.

Fishmonger's Tips
Preparation: Opening a sea urchin requires care. Use sturdy kitchen shears to cut a circular opening around the mouth (the flat part at the bottom). Gently drain the water and remove the dark parts with a small spoon to keep only the precious orange roe (uni).
Tasting: To fully appreciate the product's finesse, enjoy the roe raw, directly from the shell with a pinch of fleur de sel, or on a lightly buttered slice of crusty bread. It is also divine as a garnish for seafood platters or to crown a fresh garlic pasta dish.
Storage: Sea urchins arrive live and must be handled with care. Store them in the refrigerator (between 0°C and 4°C) under a damp cloth. For the best experience, we recommend consuming them within 3 days of arrival.
