Morue Charbonnière au Miso

Sablefish with Miso

2 pieces of sablefish (300gr)
10 cl of olive oil
1 tbsp miso
1 tsp dried seaweed
1 tbsp by mirin
1 tbsp rice vinegar
1 green onion, chopped



  1.  Combine the miso, mirin, and rice vinegar in a bowl and set aside.
  2.  Heat the oiled pan over high heat. Cook the fillet skin side down for 5 minutes then turn over and cook for another 5 minutes.
  3.  Turn over one last time and add the miso mixture. Cook for another 5 minutes, basting the fillet with the mixture. Add the dried seaweed and half the chopped onion.
  4.  Finish with the remaining onion and serve.



Serve with asparagus and rice.
Can be finished in the oven in broil position for 2 minutes for a nice coloring.
