1 Char about 3 pounds
¼ Cup kombu pesto
1.5 cups Arborio rice
4 tbsp.c of sea bacon
2 cup vegetable broth
lemon and zest
- Ask your fishmonger to prepare your char as a butterfly.
- Garnish the inside of your char with kombu pesto.
- Place on a baking sheet covered with parchment paper and bake at 10 min per inch thick at 350F.
Serve with a risotte with sea bacon:
Prepare your risotto according to the instructions and add one teaspoon of sea bacon per person.
