Ingredients

1 lb fresh smelt
Flour in sufficient quantities
Lemon
Salt and pepper
Sliced vegetables (for baking)
 

Preparation

  1.  Dry smelt with paper towels
    Frying:
  2.  Flour the smelts evenly on each side and tap to remove the excess flour.
  3.  Add enough oil to fry over high heat.
  4.  Fry the smelt until golden brown. Move on to stage 6.
    Baking:
  5.  10 minutes at 375F on a bed of minced vegetables.
  6.  Season with salt and pepper to taste.
  7.  Serve with seaweed and lemon mayonnaise.

 

Tricks

Serve warm with a green salad or a crisp fennel salad!
